Happy Heart’s Day everyone, here is something extra special for you and your loved ones. Raspberry Red Velvet Cheesecake – Valentine Dessert Recipe

For the filling
1 cup of raspberries
8 ounces of cream cheese
1 cup of cold whipping cream
1 tablespoon of fresh lemon juice
2 tablespoons of melted white chocolate or chips
1/4 cup of icing sugar (separate one tablespoon)
1 teaspoon of vanilla
1 tablespoon of unflavored gelatin
2 tablespoons of water

For the Cake layers:
Two boxes of Euro Cake Red Velvet soft bake cookies
One heart-shaped cookie cutter
1/4 cup of simple syrup
1/2 cup of drinking water
One piping bag

Berries of your choice
Chocolate of your choice to drizzle
(I just warm up some Nutella in the microwave and drizzled with that)

In a bowl mix the whipping cream with 1 tablespoon icing sugar for five minutes on low speed, or until you have stiff peaks.  Set aside.

In a separate bowl mix the cream cheese, lemon, vanilla, remaining sugar, and white chocolate.

Microwave the gelatin for 30 seconds

And combine with the cream cheese mixture, slowly incorporate your whip cream and refrigerate for 15 minutes

Combine the water with the simple syrup in a bowl.

With the cookie cutter, cut your cookies. (Use cuttings to make crumbs as a garnish for the cakes)

Start assembling the cakes by dipping one cookie in the simple syrup water and laying it on your plate, followed by the cream cheese layer. Continue this sequence until three cookies,m are stacked, finalize with your cheesecake mix and decorating with the lovely red crumbs, berries and the chocolate.

Makes 6 lovely heart cakes!
